In Japan, these dried tuna flakes are sometimes called bonito and katsuobushi. Bonito refers to the slipjack tuna and katsuobushi is the name for the way these flakes are prepared. Bonito flakes are used in many Asian recipes - you can stuff them in rice balls or use them to make a broth for miso soup, incorporate them into a sauce, or even grill them and throw them a salad.
